PASTA MAKING CLASS SCHEDULE
I love to teach people about the Italian traditions of food and pasta making.
September 28 – Southern Italian Pasta – Register Here
In this class we will learn to make Southern Italian pasta. Made with eggless dough and shaped by hand, these chewy pastas pair well with any sauce. During the class we will make the dough and shapes from three Southern Italian regions. We will demonstrate how to make 3 quick sauces for each pasta shape. The class will end with a tasting of our creations!
- Calabria – Fusilli with N’duja sauce
- Apulia – Orecchiette with Broccoli & Garlic
- Campania – Cavatelli with a quick tomato sauce
All participants receive a Melina’s Fresh Pasta Recipe Book. Classes are 2 hours long and held in Carmella’s (aka Melina) kitchen in Durham.
Each class is limited 10-12 participants.

Classes are 2 hours long and held in our shop in Durham. Each class is $59 and limited to 10-12 participants.
All classes are hands-on. We have a collection of traditional pasta making tools from Italy from the Matterello rolling pins to the “Pettine” or looms for making Garganelli to corzetti stamps and special pasta rolling boards. We will make a variety of shapes and ravioli in our Pasta 101 Class.
We eat what we make!
All participants receive a Melina’s Fresh Pasta Recipe Book to take home.
